A good old fashioned Pancake

This recipe is exactly what it says on the tin, a good old fashioned pancake recipe. It’s not dairy free or gluten free or low fat or made with wholewheat or spelt or bananas! It’s just a simple pancake recipe like the ones we grew up with.

Pancake Tuesday was always a big deal in our house partly because we are catholic. Pancake Tuesday meant Lent had arrived and some tough decisions had to be made, but most of all because if we were lucky Gran would make the most amazing drop scone pancakes for us at lunch time and then my Mam would make crepe style pancakes for us at dinner. Well we’re preparing for lent after all! It was a delicious day on the calendar no doubt about it.


1 cup flour (plain or self raising)

1 cup milk

1 egg whisked

1 tsp of baking powder

A pinch of salt


Sieve the flour and baking powder into a bowl.

Add the egg and milk.

Beat with a hand whisk into a batter.

Heat a little oil and/or in a pan.

Add a ladle of pancake batter to the centre of the pan.

Wait until you see some small bubbles around the edges of the pancake before you flip.

Flip and cook for another 20-30 seconds depending on how hot your pan is.

To make a stack pop your oven on a low heat. Keep them on a baking tray in there until all the batter is used up and you’ve a stack of warm pancakes ready to serve.

This mixture can make 6-8 pancakes.

Toppnigs suggestion; I’m a maple syrup, butter or bacon kind of girl, but there’s loads of options; berries, bananas, sugar and lemon, chocolate spread.
