Banana buns for Ned and Billy!

IMG_20180726_125920These little buns can be made as a loaf, cake or muffins just adjust your cooking time and basically keep and eye on the oven if you change the quantity!

These little buns are such a hit in this house they are pretty much or weekly bake. We normally bake them with honey but now with little Billy munching we have converted the quantity of honey to maple syrup and it’s worked with the recipe perfectly.

My top tip: For this recipe I would advise when adding wet to dry do not over mix it, seems to effect the bake! When I shared this with a friend they didn’t turn out great for her and when we discussed we realised she really went to town on the mixing. Because I hand blend the wet it really just needs a quick fold so all ingredients are wet 😉


2 cups wholemeal flour

Quarter cup of oats

1 tsp of baking powder

Half a tsp of cinnamon

Half a tsp of salt  (this really isn’t allot when divided over 12 portions so it doesn’t concern me personally for Billy’s diet on top of which he’d never be given a whole one to eat so in Billy terms it’s divided over 24 potions even)

Wet ingredients – put them all in a separate bowl to the above.

2 bananas

2 eggs

Half a cup of Honey ( or maple syrup if you have under ones) i prefer they way they bake with honey if I’m honest.

A third cup of olive oil

A quarter cup of milk

(This is definitely a recipe you can play around with so if an ingredient doesnt suit your personal choices try an alternative and see how it bakes)



Mix the flour, oats, baking powder, salt and cinnamon together in a bowl.

Put all the wet ingredients and the bananas in another bowl.

Use a hand blender to blitz the wet ingredients to a liquid.



Add wet to dry and fold in not mixing too vigiriously but making sure all ingredients are evenly mixed at the same time. A silicone spatula is my weapon of choice.

Divide into cupcake cases or a greased/lined loaf tin.

Preheat your oven to 200oc

Bake for 25 minutes, test with a skewer if you poke the centre of cake and buns your baking with a skewer and it comes out wet they aren’t cook it should come out clean or crumby.
